Ingredients (Serves 2)
- 2 eggs
- 2 cups of leftover rice
- A cup of mixed frozen vegetables ($2.50 / bag)*
- Vegetable oil
- Soy sauce (regular or dark) ($3 / bottle)*
- Oyster sauce ($3 / bottle)*
- Green onions
- Optional: Other proteins - chicken, pork, beef, shrimp
*approximate costs based on local market prices
Materials
- 1 wok or non-stick pan
- Spatula (for stir frying)
Instructions
In a small bowl, crack and mix the eggs; whisking is not necessary.
Heat your wok to medium heat and add 2-3 tablespoons of vegetable.
Add eggs and lightly scramble them.
Add the vegetables and stir fry. If you have other proteins, add them also.
Turn the heat up to High and add the rice. Woks must be on high heat when stir frying starches such as rice as a low heat will cause the starches to stick to the pan. If you’re using a non-stick pan, medium to high heat is fine.
After a few good rounds of stirring, add 2 tablespoons of soy sauce and 2 tablespoons of oyster sauce. Stir fry until all ingredients are evenly coated in the sauces.
Turn off the heat, add chopped green onions and give it a few more stirs.
Plate and serve. Add your favorite Asian chili sauces for a kick!
